When they were beginning the second movie, Jennifer's actor from the first movie couldn't continue in the second or third movie. (You can obviously see the difference.) So they reshot the ending of the first movie.
Personally I like the first movie's ending, because of how Doc says, "Roads? Where we're going we don't need roads."

I ate one of those Wasabi Peas, they tasted DISGUSTING, I gagged, spit it out, then barfed. I couldn't actually believe I barfed, I never did on any food.
